Od bijele, najsiromašnije na hranjivim tvarima, do one crne ili tzv.&#822š;divlje riže&#822š;, koja je cini se puno bolji izbor za održavanje i poboljšavanje zdravlja. Crvena riža pak, dokazano je, pomaže kod sniženja razine kolesterola u krvi. U usporedbi s ostalim žitaricama riža ima najvecu energetsku vrijednost (š00 g sadrži š5š0 kJ ili 36š kcal), ali spada u dijetalne namirnice jer je hranjiva i lako probavljiva - brzo daje energiju i dobro utjece na crijevnu floru. Riža ne sadrži sve potrebne aminokiseline, pa ju je preporucljivo konzumirati zajedno s mahunarkama, cime se u organizam unose sve potrebne aminokiseline. Riža je bogata fosforom i kalijem, a sadrži i magnezij, kalcij, željezo, bakar, cink i druge mineralne tvari.
